What's your favorite recipe for those times when you just can't think about cooking?

Mine is Baked Port Chops because they are really yummy and very easy!! What's yours? Baked Pork Chops Ingredients: Pork chops - can be boneless, bone-in, any thickness Hot& Spicy-flavored pork rinds Butter Note: amount of ingredients will depend on how many pork-chops you will be making. How To Prepare: Pre-heat oven to 375 Crush pork rinds (I do this in a sealed bag with a soup can or other blunt object), then spread crushed mixture onto plate. Generously cover pork with melted butter on both sides. Roll pork in crushed pork rinds until fully covered. Put a spot of butter on top!

Chicken, cut in strips, in a baking dish. Pour mushroom soup over and bake at 350 for about 30 minutes. Sometimes I'll go as far as to sprinkle paprika on it. Now, THAT's lazy. ;-)
well, spaggetti-os are good, lolz and sometimes, italliene potatoes, all ya do is this: Get 1 or 2 large potatoes cut them thin, like 2-3 millimeters fry them in some salad dressing (low fat) cook for 10-20 minutes till browning eat them with a glob of ketchup, and some pepper on top(ground) another good one is some olive oil, chicken and teriyaki sauce, add some asian veggies and Rice really good, and only in 20 minutes,.
Wow! That sounds good for not wanting to cook. I always do spaghetti with sauce on those non cooking days.
Meatballs in country gravy with baked potatoes on the side. That is so easy and they like it.
Hot Tamale Casserole.... Line two cans of Hot Tamales in a casserole dish Pour a can of chili (w/ or w/o beans) on top of that Sprinkle 1-2 cups of sharp cheddar cheese on top Sprinkle chopped up green onions on top of that Bake on 350 for about 1//2 hour 45 min. Dollup sour cream on top and enjoy!! This is just my easy schmeasy meal, when all else fails!

When I don't feel like cooking, we usually eat hot dogs. Sometimes, we have breakfast for dinner. Other times we have a "snack supper" (heat up a bunch of frozen appetizers-pizza bagels, potato skins, franks in a blanket, chicken nuggets, etc). An easy no-brainer is Spanish Rice 1 lb ground beef 1 c. instant rice 1 15 oz can tomato sauce 1 c. water 1 11 oz can niblet corn, drained 1 tbs chili powder 1 tsp each onion powder, garlic powder, oregano, dehydrated onion Brown ground beef; drain. Add rest of ingredients, bring to a boil. Reduce heat to med-low. Cover & cook for about 10 minutes. Adjust seasonings. Serves 6
If I'm not in the mood for cooking I always cook either an easy pasta or a sandwish. For "the fast and easy" Pasta I buy the green (spinach) fettucini from Trader Joe's, which has a nice flavor. I cook the pasta in boiling water to my liking. I always have boneless skinless chicken breast in my freezer, so I thaw one or two depending how much pasta I wanna make. I season it with salt and pepper, and smash it them so it becomes more tender. I pan fry them in olive oil (not too brown so it doesn't get dry). I chop the chicken to 1 inch stips. I drain the pasta and after the water is completely drained I return it to the pot, add olive oil and stir. Depending on what I have I usually add a clove of minced garlic, sun dried tomatoes, slivered almonds, either fresh parsley or basil... this dish will be ready in 20-30 minutes and it's soooo yummy. For easy and quick sandwiches I always make grilled turley and cheese, or chicken salad sandwich. Again, I usually have those canned breasts of chicken... one can of those with mayo, salt and pepper to your taste. Add almonds, celery, and green onions and mix. If you want you can use cranberries instead of green onions. Stick it on some bread and in 10 minutes you have a tasty sandwich.
Mine is Bertoli fettucinni noodles, Bertoli alfredo sauce, and a jar of sundried tomatoes. It's so good!
When I just cant get in the mood to cook I will whip up omeletts or egg sanwhiches w/bacon and cheese. They are so quick and easy (it helps that my daughter loves eggs).
I love cooking so I rarely feel like not cooking. However there are times when I don't want to spend all day in front of the stove. On such days I make either tuna or chicken salad. Tuna salad: Two cans of tuna your favorite brand ( Drained) Two cups of cooked egg noodles 2 cups sliced lettuce 1/2 cup shredded carrot 1/2 cup mayo (you can add more or less to your liking) 1/4 cup melted margarine 1 tsp of mustard salt to taste 1- cook your noodles drain them and cool them down by dumping them in ice water. Drain once more and put them in a large salad bowel. 2- add the lettuce carrots and tuna and mix them all together 3-add the margarine and salt to taste and mix again 4-add your mayo and mustard and mix one last time Taste for salt add more if needed 5-place in the refrigerator for about 30 minutes and enjoy
Ground Beef and Rotel 1 to 2 lbs browned ground beef 1 medium can tomato sauce (sorry, don't know the ounces) 1 small can rotel tomatoes 1 to 2 cups minute rice (depending on the amount of ground beef) 1 bag tortillas salt to taste pepper to taste onion (optional) Brown ground beef (may add onion), drain. Add tomato sauce, rotel, salt & pepper. Bring to a boil, simmer for about 30 minutes. Serve over rice. Eat with tortillas chips. I serve a salad with this.
