What is the method to obtain a perfectly tender pork chop ?

I followed a recipe to grill a center cut boneless on both sides for 3 minutes. My son said it almost broke his jaw.

In a pan, brown on both sides, lower the heat (way low) and cover it (I put a teaspoon of beer in with it) for a while. The steam cooks it tender.
Buy a thicker chop and bake it, instead... The fat is edible and crunchy then...! Oh yeah, DON'T forget the brown gravy...!
It's all in how you season it and make sure the grill is not a raging fire.

That is because you cooked it too fast...Try the upper deck on the grill if you have one, and you need to keep turning the meat over fairly often...Also using a marinade(I like to use a lemon juice based marinade, rather than a vinegar one, because I don't like how sour and bitter the vinegar taste is) before you cook it, will help seal in the moisture, and don't forget to keep brushing more of the marinade as you grill it...I also learned a tip, that cooking meat that is very cold, can make the meat drier than it would be at a warmer temperature...Now, I am not suggesting that you keep your meat out all day, because than you can get sick, but let it warm up a bit after you take it out of the fridge...Good luck! Added: I found out that if you combine A-1 steak sauce and Catalina dressing to the lemon juice with some liquid smoke, the taste is pretty spectacular!

They only pork I've eaten was while it was basted or marinated in something soo...............BBQ Pork chops baked in the oven with bbq sauce or pork in spaghetti sauce till it falls off bone------yum. Maybe that's why so many people eat pork chops with applesauce? We always do and everyone I know does too. Dip it in the applesauce to make it moister? That's gotta be it! After putting in the chops in the skillet with melted butter, brown them, then eventually add a little apple juice instead of water. Cook till done. Don't overccok. But what is even better...Put pork chops on top to white ccoked rice in a casserole dish, and add a couple of can of mushroom soup w/ garlic or garlic powder and salt, pepper. Bake till hot at 350 degrees. - You could skip the rice thing, and in the skillet, just add the mushroom soup to the chops, till done. And then serve w/ potatoes or rice as a side dish. Your son will love you.
