Try Chicken Pesto---here's a recipe from recipezaar that is so easy; you could always use premade pesto, if you wanted to make it even easier. http://www.recipezaar.com/21882 Serve with Bruschetta and Greek Isles Salad http://www.recipezaar.com/131088, which is an orzo pasta with feta, olives, and spices--really great! Good luck and God bless you.
Meatloaf with mashed potatoes and gravy. Also serve with green beans and some fresh bread.
Pot roast sounds really good!
Pork chops with spanish rice. If you use a spanish rice - like Rice-A-Roni Spanish rice, it is fast and easy. In a frying pan, sear the chops then put them in a baking pan and add the entire box of rice and seasonings. Stir together 2 cups of water, 15 ounce can tomato sauce, and 1 can of diced tomatoes. Pour over meat-rice and stir liquid together with rice and seasonings. Put in oven and cook on 325 degrees for 45 - 55 minutes. Stir and check on it after 30 minutes of baking. If too dry, you may need to mix in just a little more water.
my vote is for chicken fried steak
steak and gravy
Is this for a special occasion or a simple weeknight dinner? For your weeknight dinners I'd consider: 1. Meatloaf and mashed potatos 2. Stuffed porkchops, fresh green beans 3. Pot roast (cooked in crock pot) with veges, warm bread 4. Turkey tenderloins marinated in lemon, olive oil, and fresh rosemary or basil, grilled, served with rice pilaf and snappeas. 5. Top of the stove chicken and stuffing, peas 6. Ham slices with pineapple and brown sugar glaze, roasted sweet potatos with ginger, fresh fruit salad, and hot rolls. 7. Sausages and peppers over rice For an occasion, consider: 1. Baked ham, glazed, scallopped potatos, ambrosia, asparagas. 2. Grilled ribeyes with baked potato casserole, spinach salad. 3. Roasted turkey breasts with stuffing, mashed potatos, brussel sprouts with sauteed pancetta and yuellow onion. 4. Meatballs and spaghetti with chopped green salad and hot bread.

Mmmmmmmmm pot roast. Meatloaf would be a close contender though.
Have chicken, using this recipe-HEAVEN ON A PLATE! Pollo Mustarda Here we go:(This recipe is for about 4 breasts, but you could adjust , depending on the quantity you need to cook or the size of the portions) Pound breast a bit with a mallet(or a rolling pin!), to flatten. Cut each one in half. Dredge with flour. Keep aside. 1 eggplant(aurbegine)Slice into thickish rounds and cook on oiled grill till golden. *I do it on my George Foreman grill but an ordinary skillet will also do or you could just pop them in to a hot oven after drizzling with some oil.* Chop an onion. Slice about 8 button mushrooms(white) Heat 1 - 2 tablespoons of butter or oil Add in 1 chopped onion, cook for 3 mins until just 'pink'. Add in 1 full teaspoon of black mustard seeds Throw in the mushrooms along with 1 teaspoon of ground garlic. (If you feeling brave, you could put in 1 teaspoon of ground green chili or just leave it out.) Cook for a little while ,then throw in floured chicken breasts.Add salt to taste and a grinding of black pepper. Cook till chicken is well coated with the other ingredients and LIGHTLY browned. Pour in 1 tub (250-300ml fresh cream) and mix till thickened a bit.Turn off heat. Layer chicken with sauce , top with eggplant slices, repeat until all is used up.Sprinkle cheese on top and put into a hot oven to melt cheese. Serve with a tossed salad and some chips. Maybe some bread as well to mop up the sauce!
