It depends what you want to cook..if its soup, then bring to boil 3cups water in a pot. Once boiled, add in the spare ribs. Once boiled again, add in the onions, potatoes and carrots and bring to boil once. Then slow down the fire to let it boil or simmer until the spare ribs are tender. Presto...a healthy pot of soup! Add a dash of pepper before you serve. For quick frying, suggest you steam the spare ribs first. While steaming, slice onions and ginger. Slice bitterguord-not too fine though.. about 1mm width. Smash a pip or two garlic. Any preserved black beans? Spoon one or two. Otherwise, oyster sauce will do. Once spare ribs are ready, heat a wok with 1tbsp oil..i use olive oil..any cooking oil can do. Throw in the garlic and when slightly browned, toss in the onions, ginger. Cook for abt 2mins, add in the spare ribs, preserved black beans or oyster sauce, bitterguord and fry for a few minutes. Do not overcook the bitterguord. If need to, add 1-2 tbsp water to prevent drying. Scoop onto a dish. Serve with rice. Bon Appetit!
