Recipes for a pressure cooker?
There are a couple of things I make and I'm getting tired of the same old stuff. Any good ideas? I normally make potatoes and pork chops or I like to make chicken then shred it with some BBQ sauce. I'm having cooker's block right now! Any and all recipe's will be appreciated!

PRESSURE COOKER MEATLOAF
(This recipe is for those experienced with pressure cookers.)
1 1/2 lb. ground chuck
1 can tomato sauce
2 c. cracker crumbs
2 eggs
1/2 c. chopped onion
1/4 c. chopped green pepper
Salt & pepper to taste
Combine all ingredients and form into 2 or 3 small round loaves (whatever fits in your pressure cooker). Fill bottom of cooker with 2 cups water and place loaves in pan. If desired, place aluminum pie plate, with slits in plate, over meat and layer peeled potatoes and carrots on top of plate. Place lid on cooker with pressure gauge. Cook on store top on high heat until gauge begins to jiggle, then reduce heat to medium high and cook about 10 minutes.
Meatloaf will be very moist, unlike conventional oven meatloaf. Remove meatloaf from cooker, spread butter on top and broil in oven until lightly brown.
LEMON HERBED CHICKEN IN PRESSURE
COOKER
1 (3 to 3 1/2 lb.) chicken, cut up
Salt and pepper to taste
2 to 4 tbsp. olive oil
1 onion
1 tbsp. chopped garlic
1 c. chicken broth
1/4 c. lemon juice
1 c. chopped parsley
1/2 c. chopped celery leaves
2 tsp. chopped fresh oregano or 1 tsp. dry oregano
1 tsp. chopped fresh basil or 1/2 tsp. dry basil
1 c. pitted black olives (optional)
2 tbsp. flour (optional)
2 tbsp. cold water (optional)
Wash chicken and pat dry with paper towels; sprinkle with salt and pepper. Heat olive oil in a 4 or 6-quart pressure cooker. Saute onion and garlic until tender; remove. Brown chicken a few pieces at a time, set aside. Return all chicken to cooker with onion and garlic. Add remaining ingredients, except flour, water and olives.
Close pressure cooker securely with pressure regulator in place. Cook 10 minutes at 15 pound pressure. Cool cooker at once. Remove to warm dish.
If using olives, add to liquid and heat. Blend flour and water. Add to hot broth. Cook and stir until thickened. Pour over chicken. 4 to 6 servings.

The above is a great online site for pressure cookers. She has a ton of recipes but it requires that you download them to view.
If you have the time and inclination perhaps you will do this and then you can always delete afterward. Unfortunately, cutting and pasting isn't an option at this site but it is very useful.
My favorite is stew, but I do it by heart:
BROWN:
1 pound chopped beef(not ground beef, put cut into squares)
THROW IN:
2 carrots, peeled and chopped
2 potatoes, peeled and chopped
2 zuchini, chopped
1 onion, diced
1 bell pepper, diced
a couple of cloves of garlic, finely chopped
ADD
some tomato juice,
worchestershire sauce,
chili powder,
garlic salt
let the pressure rise, and cook for about 3-5 minutes

PRESSURE COOKER LEMON PUDDING
1/2 cup sugar
2 T flour
1/8 tsp salt
1 T butter
3 T lemon juice
Rind of 1 lemon, grated
2 egg yolks, beaten
2 egg whites, beaten
2/3 cup milk
2 cups water
Separate eggs. Beat egg yolks a light lemony color. In separate, clean bowl, beat egg whites to a soft peak.
Combine flour, sugar, salt and butter. Add lemon juice and rind, beaten egg yolks, and milk. Mix.
Fold in beaten egg whites. Pour into individual custard cups or ramekins.
Cover each with aluminum foil.
Pour water into pressure cooker. Place cups on rack inside cooker. Close cooker and bring up to pressure.
Cook 10 minutes - begin timing when cooker begins to vent. Use lowest pressure setting (2-5 lbs depending on your cooker).
Follow manufacturers directions to reduce heat and cool immediately. Serve warm or cold with whipped cream
MEAT CABBAGE ROLLS (Pressure Cooker)
1 lg. head cabbage
1 lb. ground beef
2 tsp. salt
1/4 tsp. pepper
1 c. cooked rice
1 c. milk
2 tbsp. shortening
2 tbsp. brown sugar
1/2 c. water
Separate cabbage leaves and soften in boiling water. Drain. Combine meat, salt, pepper, cooked rice and milk; mix well. Place a tablespoon of mixture on cabbage leaf and roll up and place in pressure cooker that you have melted the 2 tablespoons of shortening in. Brown slightly. Sprinkle with brown sugar and add 1/2 cup water. Close cover securely. Cook 10 minutes at highest pressure. Remove from heat and let pressure drop.

Beef Stroganoff
2 lbs. beef stew meat or round steak,
cut into 1" cubes
3 tablespoons oil
2 tablespoons flour
1 large onion, chopped
1 teaspoon garlic
1 cup beef broth
1/4 lb. fresh mushrooms, sliced
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 cup sour cream
Salt and pepper to taste
1 package egg noodles, cooked
Directions: In cooker, brown meat. Add flour and mix well. Stir in onion, garlic powder, mushrooms, tomato paste, and Worcestershire sauce. Blend thoroughly. Close the lid and bring to high pressure. Cook 20 minutes. Release the pressure and remove the lid. Stir in sour cream and blend well. Serve over hot egg noodles.
And for desert:
Spiced Apple Crunch-
Serve this warm with whipped cream or a la mode. Instead of apples you might try peaches.
1 cup dry bread crumbs
1/4 cup sugar
1/2 teaspoon cinnamon
1 lemon (juice and rind)
3 apples, sliced
1/4 cup butter, melted
2 cups water
Directions: Butter a Fagor baking dish or 6" baking dish. Combine bread crumbs, sugar, cinnamon, juice and rind of lemon. Place alternate layers of apples and crumbs in baking dish. Pour melted butter over ingredients and cover bowl firmly with aluminum foil. Place water, cooking rack and bowl in cooker. Close lid and bring to high pressure and cook for 15 minutes. Release pressure, remove the lid and the steamer basket with dish or baking tray. Loosen the foil and cool. If you wish to add more color and crunch, run the dish quickly under the broiler (watch carefully to prevent burning).
